Pistachio butter overnight oats with mandarin and mint

This overnight oats recipe with our pistachio butter is as simple, refreshing and healthy breakfast that you can prepare in advance. And when store in a proper container like a mason jar, this oats can last all week. So it makes it a nutritious meal prep idea for the weekend to prepare for an entire work week.

In terms of toppings, we recommend mandarin for its' citrusy that will balance out the rich flavor from the pistachio. Adding mint to this is also recommended for the hot summer in Hong Kong.

Ingredients:

  • ½ cup rolled oats
  • ½ cup soy milk or your milk of choice
  • 1 tablespoon (20g) RATA Pistachio butter
  • 1 tablespoon Greek yogurt (optional)
  • 1 teaspoon chia seeds
  • 1 teaspoon honey
  • Top with mandarin and mint

Method:

Mix all ingredients in a mason jar and put in the fridge overnight or at least 6 hours.

Top with fresh mandarin and fresh mint.
