If you are tired of your typical meat sauce pasta and looking for another simple yet elegant alternative for a casual after-work dinner, here is one! Pasta al Pistacchio (Pistachio pasta) requires only our pistachio butter and 6 ingredients that are easy to find at your favorite grocery stores. Treat yourself to this savory and creamy dish that comes with a unique hint of sweetness today! 

Choice of Ingredients

  • Pasta: Any pasta type will do but pasta corta (short cut pasta) type is our favorite for this dish. 
  • Onion: Red onion has a brighter color and more sweetness that matches nicely with pistachios. 
  • Pistachio: chopped, unsalted pistachios and RATA pistachio butter.
  • Cheese: Pecorino and Parmesan would work perfectly. We use Pecorino because of its softer and creamier texture.
  •  

    Ingredients:

    • 40g RATA pistachio butter
    • 100g penne pasta
    • 50g pancetta 
    • 1/4 red onion (thinly sliced) 
    • 1 egg yolk 
    • 40g Cheese of your choice (Pecorino recommended)
    • 1 splash of white wine 

    Garnish: 

    • Basil (optional) 
    • Slow cook garlic (optional) 
    • Lemon zest (optional) 

    Method:

    • Boil pasta in salt water until desired texture (about 6-8 minutes). 
    • Mix egg yolk, cheese, RATA pistachio butter and set aside.
    • Pan-fry red onions and pancetta, add white wine, reduce to half the amount added, and add cooked pasta.
    • Remove pan from heat and add in egg yolk, cheese, and pistachio mixture and mix well.
